Mediterranean Cobb Salad with Green Goddess Dressing

Green Goddess Dressing
1 cup whole milk Greek yogurt
1 cup parsley
1 cup mixed soft leafy herbs, dill, mint, tarragon, and/or cilantro
2 Tbsp chopped chives
2 Tbsp lemon juice, plus ½ teaspoon zest
1 Tbsp olive oil
2 tsp capers
1 garlic clove
¼ tsp sea salt
Freshly ground black pepper


In a food processor, combine the yogurt, parsley, mixed herbs, chives, lemon juice, zest, olive oil, capers, garlic, salt, and pepper. Pulse until well combined. Season to taste.


Mediterranean Cobb Salad
1 head romaine lettuce, chopped 
1 small box of mixed greens 
2 hard-boiled eggs, quartered 
1 cup feta 
1 small box of cherry tomatoes 
1 cucumber, sliced 
1 cup kalamata olives, sliced 
1 cup pistachio, crushed 


Toss the greens with the dressing and place the greens on a large serving platter. Create rows with the different toppings and vegetables.
