Easy and Delicious No-Cook Recipes for Hot Days

This summer has been a scorcher here in Colorado and when the summer heat is at its peak, the last thing you want to do is turn on the stove or oven. Luckily, there are plenty of delicious and refreshing no-cook recipes that are perfect for hot days. Here are some of our favorite easy no-cook recipes to keep you cool and satisfied all summer long.

Zucchini Noodles with Pesto

No-Cook Zucchini Noodles with Pesto

4 medium zucchinis, spiralized into noodles
1 cup cherry tomatoes, halved
1/4 cup pine nuts
1/2 cup basil pesto (store-bought or homemade)
1/4 cup Parmesan cheese, grated
Salt and pepper to taste

Place the zucchini noodles in a large bowl. Add the cherry tomatoes and pine nuts. Toss with basil pesto until evenly coated.
Sprinkle with Parmesan cheese. Season with salt and pepper to taste. Serve immediately or chill in the refrigerator for 15 minutes before serving.

Tropical Fruit Salad

1 mango, peeled and diced
1 pineapple, peeled and diced
2 kiwis, peeled and sliced
1 papaya, peeled and diced
1/2 cup shredded coconut
Juice of 1 lime
1 tablespoon honey
Fresh mint leaves for garnish

In a large bowl, combine the mango, pineapple, kiwis, and papaya. Add the shredded coconut and toss to combine.

In a small bowl, whisk together the lime juice and honey. Drizzle the lime-honey mixture over the fruit salad. Toss gently to coat. Garnish with fresh mint leaves. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Avocado and Tuna Lettuce Wraps

2 cans tuna, drained
2 ripe avocados, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lemon
Salt and pepper to taste
Romaine lettuce leaves

In a medium bowl, combine the tuna, avocados, red onion, and cilantro. Add the lemon juice and mix gently. Season with salt and pepper to taste. Spoon the tuna mixture onto romaine lettuce leaves. Serve immediately as wraps.

Cucumber and Hummus Wraps

4 large tortillas
1 cup hummus
2 cucumbers, thinly sliced
1/4 cup roasted red peppers, sliced
1/4 cup black olives, sliced
1/4 cup feta cheese, crumbled
Fresh spinach leaves

Spread hummus evenly over each tortilla. Layer with cucumber slices, roasted red peppers, black olives, feta cheese, and spinach leaves. Roll up the tortillas tightly. Slice into halves or pinwheels. Serve immediately or wrap in plastic wrap and chill in the refrigerator until ready to serve.
