Recipe: Homemade Pappardelle Pasta
It’s National Pasta Day and what is better than homemade pasta to celebrate! Make up a batch of this homemade dough and then toss with your favorite sauce!
Pappardelle Pasta
2 cups unbleached all-purpose flour
2 cups semolina flour
1 pinch salt
7 egg
1 oz water
2 Tbsp olive oil
Grated Parmesan to garnish
Mound the flours and salt on the tabletop and make a well in the center. Mix egg, water, and olive oil in a separate bowl. Add this mixture into the well. Using a fork, slowly incorporate the wet and dry ingredients. When the flour is almost incorporated, start to knead the dough by hand. Continue kneading until the dough is smooth and elastic. Wrap the dough in plastic wrap and rest for 30 minutes.
Begin with the rollers set as far apart as possible, usually #1 on the setting. Form 1/3 of the dough into a rectangle about 1/8-inch thick. Run the pasta through the machine. Fold in thirds and repeat several times in the same setting until the dough is soft. Decrease the setting one notch and run the pasta through again. Continue to decrease the setting each time and then run the pasta through. Continue until the desired thickness is reached. Cut sheets into lengths depending on the requirements of the dish. Lightly dust pasta sheets with flour and place them on a sheet pan. Cover with a dry towel until ready to cut.
Cut the pasta into strips about 3/4 “wide. Bring a large pot of salted water to a boil. Add the pasta and cook until just tender. Drain and place in a serving bowl.
