Sausage & Potato Hash

2 Tbsp butter
1 lb. baby red potatoes, peeled and diced 
1 small yellow onion, diced
1 lb. spicy Italian sausage
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeno, seeded and diced 
1 tsp garlic powder
1 tsp Paprika
Salt & pepper to taste 
Smoked or chipotle cheddar grated 

Heat a large cast iron pan over medium heat.  Melt 2 tablespoons of butter and add potatoes, season with salt and pepper and cook for 7 to 10 minutes, stirring occasionally, until they are about halfway cooked through.

Add the onion and Italian sausage, cook until sausage is almost browned, stirring occasionally.

Add the bell peppers, jalapeno, garlic powder and paprika to the skillet and stir. Reduce the heat, and continue cooking uncovered until potatoes are cooked through; about 8 minutes. Add cheese and cook for 2 to 3 minutes or until the cheese is melted. 

Taste and add more salt and pepper as desired.
