Spiced Peanut Soup

Spiced Peanut Soup
1/4 cup peanut oil
1 yellow onion, diced
2 Tbsp ginger, minced
2 Tbsp garlic, minced
3 quarts chicken stock 
2 lbs sweet potatoes, peeled and cut into thick slices. 
3 cups crushed tomatoes 
1 lb kale stemmed, cut chiffonade 
1 cup natural peanut butter
Salt and pepper to taste
1 Tbsp piri piri seasoning 
Toasted Peanuts (see below)
Cilantro to garnish 

Put oil in a deep skillet over medium heat; add onion, ginger and garlic and cook, stirring occasionally, until onion is soft.

Stir in the stock and the sweet potatoes, bring to a boil, and turn heat down to medium-low so the soup bubbles gently. Add salt, pepper and piri piri to season. Stir in tomatoes and kale, then cook, stirring occasionally, until the sweet potatoes have cooked through. 

Stir in 1/2 cup peanut butter. Taste, adjust seasoning (you may want to add more peanut butter at this point) and serve, garnished with the Toasted Peanuts and cilantro.

Toasted Peanuts
1/4 cup toasted peanuts, crushed 
1 Tbsp piri piri sauce or seasoning 

Simply toss peanuts in seasoning or sauce to coat evenly. Serve over soup.
